[bsp][docs] record measured peripherals on the boards at hand

The board READMEs for the chips on hand did not say which peripherals have actually been exercised. This follows the peripheral table used by the other RT-Thread board documents.

• bsp/wch/risc-v/ch32v203c-evt-r0: add a support table. GPIO, USART1, ADC1, PWM on PA8, RTC, the watchdog utest and USB device have been run on CH32V203C8T6-EVT-R0. SPI, I2C and CAN stay unsupported. The default image is still GPIO and UART1.
• bsp/wch/risc-v/ch32v307v-r1: the Chinese README lists only the two results from CH32V307V-EVT-R1: the on-board Link UART reaches msh, and the 10M Ethernet port gets an address by DHCP. Other drivers already in the menu are left unchanged.
• bsp/ESP/ESP32_C3: note that ESP32-C3-DevKitM-1 reaches msh on this BSP. Its RGB LED is GPIO8, and the menu still uses the LUATOS IO12 lamp, so that LED was not aligned. Wi-Fi and BLE were not part of this run.
