docs: adopt library, project and organ responsibility roles

Canonical and public descriptions disagreed on whether Eyes or the visualization
projects render and store figures. This change aligns them with the existing
project-manifest/dashboard contract and adopts library/project/organ responsibility
roles without changing repository categories or their release gates.

Defines roles in ORGANISM.md, links them from the public docs, and corrects the
Eyes skill's stale boundary clause. Commands, registries and runtime behavior are
unchanged; routing trials and new profiling/inference organs remain future work.

Closes #442.

No executable scripts. Changes ORGANISM.md, docs/concepts/organism.md,
docs/satellites.md, docs/organs/eyes.md and skills/eyes/eyes.md (boundary prose only).

• Independent Claude Fable 5.1 final working-tree review CLEAN; exact file hashes retained.
